Chana Palak Masala

Healthy chana (chickpea) palak (spinach) masala

Ingredients

Curry

  • 3 tbsp neutral oil (sunflower)
  • 1 large onion chopped
  • 4 garlic cloves
  • 1 tbsp ginger paste
  • 2 tbsp ground coriander
  • 1/2 tbsp turmeric
  • 1/2 tbsp cumin
  • 1/2 tsp chili powder
  • 1 pack of chopped tomatoes or passata
  • 1 can (400g) of chickpeas cooked per instruction
  • 120ml chicken stock
  • 100g fresh spinach chopped
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 tsp garam masala
  • 1 tbsp lemon juice
  • 1/2 cup (100ml) coconut milk
  • Handful of fresh coriander

Garnish

  • 1 green chili
  • 2 tbsp mint yoghurt
