Keto Chicken Satay
Ingredients
Chicken Marinade
- 500g diced chicken breast / thighs
- 1 tbsp curry powder
- 1/2 tsp ground pepper
- 1 garlic clove minced
- 1/4 tsp sea salt
- 1 tbsp lime juice
- 1 tbsp fish sauce
- 2 tbsp dark soy sauce or Tamari
- 2 tbsp coconut oil
Peanut Sauce
- 1 tsp garlic minced
- 1 tsp ginger minced
- 120ml (1/2 cup) peanut butter
- 120ml (1/2 cup) coconut cream / milk
- 2 tsp sweetener (I use stevia erythritol)
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 60ml (1/4 cup) water
Garnish with chopped spring onions and slice chilis
