Chickpea Almond Protein Bar

Punch packing chickpea protein bars

Equipment

  • 1 baking dish
  • Food processor/mixer

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 6 large dates
  • 1/4 cup (60g) almond butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 3 scoops (~20-30g per scoop) of protein powder
  • 2 tbsp chia seeds
  • 1/4 cup sunflower seeds
  • (Optional) 1/3 cup (~60g) raisins/dried fruit

Method

  1. Put chickpeas, dates, almond, vanilla, cinnamon and salt in a food processor
  2. Process this mix until smooth, scraping container edges as needed
  3. Add in protein powder, chia and sunflower seeds. Process until smooth
  4. With wet hands, press the mixture into the baking dish
  5. Freeze for an hour
  6. Cut the mass in to 10 slices and store in the fridge
