Peanut Butter Energy Bars

Healthy peanut butter based energy bars with seeds and nuts

Equipment

  • Square baking pan

Ingredients

Serves about 10 bars.

Base

  • 2 tbsp coconut oil
  • 1/4 cup (60g) peanut butter
  • 3 tbsp sweetener
  • 1/2 cup pecans
  • 1/4 cup almonds
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds

Topping

  • 1/2 cup chocolate chips
  • 2 tbsp peanut butter
  • 1/2 tsp sea salt

Method

  1. In a bowl, mix all base ingredients well
  2. Spoon the base mixture into the muffin form pressing into a tight mould
  3. Freeze the mixture for about 2 hours
  4. In a saucepan, melt the chocolate chips and peanut butter until smooth
  5. Remove the tray from the freezer
  6. Spoon out about 1 tbsp onto the form moulds
  7. Sprinkle a bit of the sea salt on each
  8. Enjoy!
