Tuscan Chicken

Rich, tuscan chicken

Ingredients

  • 1/4 tsp xantham gum
  • 2 tbsp olive oil
  • 4 breasts of chicken
  • 2 tsp oregano
  • 1/2 tsp smoked paprika
  • 3 tbsp butter
  • 4 garlic cloves
  • Handful of sun dried tomatoes (use normal tomatoes but be sure to salt before)
  • Handful (100g) spinach
  • 200ml chicken stock
  • 1/2 cup double cream
  • 1/4 cup grated parmesan

Method

  1. Combine the paprika and oregano in a bowl, then add chicken breasts, coating evenly
  2. Heat oil in a pan on med-high heat and cook chicken skin side down for 5 minutes
  3. Turn chicken over and cook on other side for 4-5 minutes, until golden brown
  4. Remove chicken and set aside
  5. Add garlic and tomatoes to pan, cook until aromas are released
  6. Add chicken stock to the pan, return the chicken, simmer for 5 minutes
  7. Add the spinach, cook until it has wilted
  8. Then add the double cream, half the parmesan, cooking through
  9. Serve over whatever side, with the rest of the grated parmesan as garnish
